Sweet and Spicy Ribs

Serves six


Ingredients:

1 cup chili sauce

½ cup ketchup

½ cup tomato puree

1 tablespoon prepared yellow mustard

4 tablespoons honey

2 teaspoons hot sauce

1 cup apple cider vinegar

4 tablespoons chopped chipotle peppers

1 teaspoon salt

½ teaspoon black pepper

2 ounces espresso [granules? brewed?]

2 pounds ribs

Preheat oven to 350 degrees.

To create the sauce, add all ingredients except the ribs in a mixing bowl and combine using a wire whisk. Adjust seasonings to taste. Reserve half of the sauce for the cooked ribs.

Heat a pan over high heat on the stove. Sear the ribs briefly to seal in the juices, and then dip into one of the sauce mixtures. Wrap the sauce-coated ribs in aluminum foil, place on a baking sheet, and roast in the preheated oven for 40 minutes. Remove from the oven, and allow to rest for 10 minutes. Brush ribs with the reserved sauce and serve with your favorite side dishes.
