Makes 36 cookies
Ingredients:
3 sticks butter
1 cup sugar
1 cup brown sugar
4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
4 eggs
2 tablespoons molasses
1 tablespoon vanilla
1 cup white chocolate chips or chunks
1 cup dried cranberries
Preheat oven to 350 degrees.
Using a hand mixer, beat the butter, sugar and brown sugar until it forms a paste-like batter. Add the remaining ingredients and mix at low speed until smooth (be careful not to over-mix, as it will result in a hard cookie).
Using an ice cream scoop, drop scoops of batter onto a greased baking sheet, ensuring ample space between scoops to allow cookies to expand during baking.
Bake for 13 minutes, then transfer to a wire rack. Allow to cool before enjoying!
